- Cryomaceration in the absence of alcohol and maceration during alcoholic fermentation. Closed and open pump-overs for increased oxygenation. Délestage at 2/3 of alcoholic fermentation. Complete malolactic fermentation.
- Tasting notes
- With a deep ruby red appearance, featuring notes of sour cherry and almost incense-like spices, it concludes with tannic notes that are full-bodied and persistent but never disconnected.
