- First decade of August for Chardonnay; September for Catarratto
- Aging
- The Chardonnay ferments in large barrels and remains there until the final blend is created. The Catarratto ferments in steel tanks and is only transferred to barrels afterward. The blending is done in a tank a few months before bottling. It is followed by bottle aging.
- Winemaking
- Soft pressing of the grapes; cold static settling of the musts; clean separation and controlled temperature fermentation with selected yeasts.
- Tasting notes
- Pale yellow with golden hues; aromas of acacia, honey, white flowers, pineapple; full, harmonious, and persistent taste of ripe fruit with lingering notes.
